My homemade Greek yogurt, fresh, tart, pure, non-fat, smooth and light is in line with my lifestyle change. A bowlful of my Greek yogurt drizzled with honey is my daily mid morning snack. Yogurt has an important ingredient, lactobilli, found to be a common ingredient of people who live long lives. Last, but not least, the whey is the by product that Ken uses to nourish his organic garden vegetables. Fresh malabar spinach tofu soup for lunch.
Three fish, 2 weke ula and 1 moano, were poached. Then, Ken poured hot garlic oil over the green onion, ginger, cilantro garnish with soy sauce. Steamed toau with onion ginger hot garlic oil sauce.

BUT today at our non-instructional session at Aina Koa park we were pleasantly surprised to have among us a world champion surfer who did tai chi for her first time. Only a few of us recognized her and one of our regulars is related to her, too! I hope she'll find time to come back again.
When I got home and read my email, I gained another subscriber on our everydaytaichi4U YouTube channel. Another out of town person ordered 2 everydaytaichi t-shirts and he will be practicing with us in July. He says that he has been my online student and studying tai chi with me for years! A third person says he enjoys our programs on our website and wanted our DVD's mailed to him. To me, this is what tai chi is all about. It brings great satisfaction and keeps us connected to others all the time. On this special day, everyone celebrates their mother. I am very fortunate to still have a mother to visit, hear, touch and talk to. There is so much I can tell you about how special she is to me. On my walks around my neighborhood, I have taken pictures of flowers and will use them to describe her. Mom, too, is very practical and always taught my brothers and me to make use of what is around us, before looking elsewhere for something frivolous and not as meaningful. Mom is unique. She has her own mind and way of doing things her own way. She is determined to keep her ideas and point of view in the forefront. Her activities carry out the strong purpose she has for herself. Mom taught us about family and our ancestors and showed us that we are who we are because of them. The fragrance of the small Chinese violet or pakalana is like the ongoing thread that continues to be the underlying element that keeps our family focused and together. We follow her value system that emphasizes education and striving to be the best we can be. Mom taught us be cohesive, to take care of each other. No one should be left behind. We are FAMILY. Together, we can be strong and can accomplish our goals and ambitions. Mom taught us that you don't have to look far to find what you need. Use what you have and build on them, then you'll have a sense of self worth and a bigger sense of accomplishment. Along this thinking, she was one to keep things simple, pure and not too complicated. Mom felt that learning from others was very important. We must listen and appreciate other ways of thinking. Beyond that, figure out whether our own ideas need to be altered to keep our goals full of rich, wholesome thinking! Mom has led a colorful and vibrant life full of all the things she ever wanted. She is a former elementary school teacher and today she has her own "school" of kids: Her former students will remember her as Mrs. Lo, but to us she is our Mom, Grandma and Tai Tai. She no longer gives out report cards, but today her card is full of LOVE, Respect and Gratitude. Happy Mother's Day from 3 children, retired and successful in their careers 7 grandchildren 11 great grandchildren and 1 more on his way To me, mom had the right formula for a prolific, and outstanding family that to this day has been influenced by her caring, helpful teaching. A good portion of my day and life is to cook for my family. Today was not an exception! From Ken's garden we had freshly harvested amaranth and Malabar spinach. They were added to the filling for the steamed dumplings. Altogether, the filling consisted of purple and yellow sweet potato, spinach and amaranth, both Shiitake mushrooms and dried tofu with char siu sauce, and seasoned with green onion, ginger garlic sauce. Dipping sauce on the side was cilantro vinegar, garlic shoyu. Our layered kale salad below consisted of kabocha squash, eggplants from the garden with tofu. Non fat Italian dressing flavored our garden fresh kale. Eggplants were steamed in the sweet corn liquid. We then sprinkled them all with diced homemade kim chi and onion ginger garlic sauce. This was our vegetarian Mother's Day dinner after a family outing for Chinese food for lunch.

Below is a short slideshow of the sites in Kuliouou Valley trail. Steamed baby garden greens provided a bed for our steamed dumpling. They were seasoned with cilantro shoyu garlic dip with grated ginger and green onions.
For dessert we had a sliced chilled guava from our backyard and island grown lichi that I wish grew in our yard, too! Beginning May 12, Friday non-instructional session at Kilauea District Park start time will be 9AM.
