The robust flavor of roasted tofu is further enhanced with a blend of umami rich miso and maple syrup to give it a savory flavor. Cinnamon mint lemon apples, with a bed of fresh spinach, and steamed brown rice, lend yet another level of richness! A little olive oil was used to brown with a nice crunch the brown rice, then seasoned with fresh ginger, turmeric with black pepper and vegetarian stir fry sauce. In another pan more veggies were stir fried. Carrots, green beans, Chinese peas and onions were then added to the crunchy rice along with the raw cabbage finely sliced. Seasoned with fresh basil, a squirt of fresh lemon and topped with pickled mango! So many flavors all making your taste buds go crazy!!
Over wheat pasta is a yummy spaghetti sauce with all kinds of beans, garbanzo, black eye pea, barley, and lentil that were browned with olive oil along with fresh garden herbs. Chopped fine were rosemary, oregano, kalamungi, chives were added after finely chopped ginger, turmeric and garlic were browned. Then a can of sweet corn, carrots, and round onion were added with can tomato sauce. After 10 minutes of simmering with seasoning of cumin and chili powder, fresh malabar spinach was added. Oh, so yummy, flavorful, healthy and colorful.
